Balsamic Vinegars

Cherry ~

We start with a 12 year old Balsamic and add natural cherry flavor. A very full and velvety mouth feel provide the back bone of our cherry vinegar. The rich cherry flavor is unparalleled, the sourness and acidity act to heighten the true cherry flavor. Try with your next duck or turkey dish. This vinegar is an excellent glaze for pork and lamb dishes, great with champagne or any sparkling white. It even works well as a tangy treat for ice cream, and is great for salads. 6% acidity

Fig ~

We start with a 12 year old Balsamic and add natural fig flavor. This rich, dark balsamic vinegar has a full fig flavor. Our fig vinegar is the perfect glaze for any meat dish. Brush chicken, duck, lamb, pork before cooking or add a drop or two to your favorite pie; apple, cherry or pumpkin. And even after all of those options it great paired with blue cheese or aged cheddar 6% acidity

Golden ~

This white variety is often used when the color of white sauces or foods will be adversely affected by the dark brown color of traditional balsamic vinegar. Golden balsamic is a bit milder and less sweet but still delicious.

Pear ~

We start with a 12 year old Balsamic and add natural pear flavor. This sweet/tart vinegar is wonderful for salads, excellent over cheeses or sip with seltzer for a zesty drink. 6% acidity

Raspberry ~

We start with a 12 year old Balsamic and add natural raspberry flavor. This vinegar with it’s bold raspberry aroma and flavor is perfect for vinaigrettes and sauces. 6% acidity

Organic ~

This organic balsamic vinegar is absolutely unique in the world of vinegar. As opposed to ordinary vinegar, produced from an alcoholic liquid, balsamic vinegar is obtained directly from grape juice, is boiled in an open vat over a fire, then it is placed in barrels made from top quality wood where it is transformed into vinegar thanks to natural and fermentation and oxidation processes. This vinegar originates with a careful selection of grapes obtained and produced with Biological Agriculture Methods.

Balsamico di Modena ~

The original Aceto Balsamico di Modena is based on the juices of the Trebbiano and Lambrusco grapes, which are cultivated on the mountainsides around Modena, Italy, or in the province of Reggio Emilia This balsamic has been carefully aged for the best flavor. It has a distinctive mellow taste and is so smooth you could sip it after dinner! Use it to drizzle on savory foods or as a dessert sauce for vanilla ice cream or strawberries. It's perfect for aged cheeses, cured meats and fresh fruit. 4% acidity

Wine Vinegars

Cabernet ~

A garnet hued rich and complex vinegar with pleasing wine flavors with a hint of sweetness. Great compliment for salads that contain meats or cheeses. Use in any preparation that calls for red wine vinegar.

Champagne ~

With an inviting bouquet of woodsy notes and balanced acidity this vinegar can be used in all recipes calling for white wine vinegar. Splash over freshly steamed vegetables, on lighter green salads or seafood salads.

Chardonnay ~

A pale gold vinegar with a delicate crisp flavors a sherry like qualities, this is the ultimate vinaigrette vinegar. Flavors marry well with dijon herbs and capers. Use it to finish a saute of shellfish and garlic.
